Garlic is a highly aromatic and strongly flavored bulbous plant in the lily family (which also includes onions and leeks). It apparently originated in central Asia, and it is particularly popular in Italian, Greek and other southern European cuisines as well as some Asian cuisines. In addition to its unique flavor, garlic has long been believed to have excellent medicinal properties, including anti-bacterial, anti-fungal, and heart-protective abilities. There are indications that it may also help stabilize blood sugar levels and provide protection against cancer. When using garlic, it is important to avoid scorching and blackening it. The reason is that this not only destroys its flavor, but it but also creates chemicals that may be toxic. Thus, when used in stir fries, it should be added towards the end of the cooking.
